Mole Duck Legs
The rich flavors of mole pair amazingly with the flavor of waterfowl especially the legs.
I’ve included two recipes for the mole sauce, one using premade mole paste which makes for a quick easy meal, the other making mole from scratch.

This is a great way to turn someone into a rabbit lover, don’t let the roux intimidate you its all about consistent heat, its also a great way to involve someone else in the cooking process, they don’t have to be a professorial chef, just have to be able to stir!

Who doesn’t love chili, this one gets a nice kick from chipotle peppers and Mexican chorizo resulting in a deeply layered chili that’s thick and chunky to keep everyone satisfied.
If you don’t have any pheasant on hand this recipe also works with ground venison, lean beef or turkey.
Venison Jerky
Everyone’s favorite snack, sure you can have a processor make jerky for you but the satisfaction that comes with putting in the time slicing, marinating and dehydrating your own makes you appreciate it more… and also consider how close of friends your really are when someone asks for a bag of it.
